Onions: 375 degrees F oil temp (191 degrees C oil temp). French Fried Potatoes: 350 degrees F oil temp (178 degrees C oil temp). Syrups & Candy: Syrup: thread test: 230 degrees F syrup temp (110 degrees C syrup temp). Fudge: soft ball test: 240 degrees F syrup temp (116 degrees C syrup temp). Do not allow tip of thermometer to touch bottom of pan. 3) Follow recipes temperature instructions and adjust stoves setting if necessary. 4) Use the red handle to safely grasp and remove the hot thermometer. 5) Allow thermometer to cool before cleaning. 6) Wash with warm soapy water. Do not use abrasives to clean. 7) Not recommended for use in dishwasher.
